millet “rice” pudding
Note:
This dessert is awesome and doesn’t leave you feeling tummy heavy like a rice pudding. Millet is one of the oldest foods known to humans. It is a small, seed-like grain which is alkaline, rich in B-vitamins and gluten free. Hooray!
Ingredients:
3 cups of pre-cooked millet
1 cup soy or rice milk
1 teaspoon of vanilla extract, to taste
½ cup of shredded or desiccated coconut
2 teaspoons of cinnamon
Recommended toppings- maple syrup, mashed banana and crushed nuts
Instructions:
1. Mix all ingredients together in a pot and WARM (not boil) over medium or low heat.
2. Stir frequently to prevent the soy/rice milk from burning on the pan.
3. Serve warm or chill in refrigerator for 1 hour before serving.
